Jenn’s Bike Bites

I created these to sustain my energy when I started biking back in 2018.  My nutrition habits had changed and finding a product with low sugar, high protein, and cost effective was a challenge.   You can modify this recipe as needed.

Jenn’s Bike Bites

3/4c-1c Dates   (Depending on how moist or sweet you want it)

¾-1c Figs        (Depending on how moist you want it)

1/3-2/3c cashews (if use raw then use 1/3c bc it will be too buttery otherwise)

1c pecans

3/4c-1c coconut

1 Guayeco guava paste/ or 1c dried mangos

Mix on dough setting    (I used my Ninja)

Mix on puree setting

Mix on additional dough and puree settings until a dough ball is formed

1 scoop Vital Proteins beef gelatin or protein of choice

1/4c chia/ sesame/ flax seeds

1/2c coconut

Mix in- be creative here

1/3c sunflower seed

1/3c pumpkin seed

½-1c dried fruit of choice

Mix on pulse a few times to disperse nuts and fruit or any other mix in.

Dump in parchment paper and mold into a preferred form.  I mold it into a rectangle about ¼ inch think and cut into bit size pieces.  Store in a closed container in the fridge or freeze

I don’t recommend using flax coco coconut mix as it did not flavor well.
